Quarantine Baking is trending during this COVID-19 times, while this would be remembered as a part of history, everone is trying to make best out of this #stayhome time.

For me, its all about the house chores, kids times and bit of recipes sharing on Instagram or here

Banana Cake is very simple, failproof and delicious bake option for all the beginers, the flavour of over wiped bananas will really take your bread's taste to the next level. While you might find lot of recipes on net. I'm sharing with you all, my best and simple recipe.

Ingredients

  • 2 Cups All purpose flour
  • 2 Medium Eggs
  • 5 Riped Bananas
  • 2 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 1 cup sugar (half brown + half white)
  • 1/4 tsp Salt
  • 3/4th Cup Oil
  • 1/2 Cup chopped walnuts / chocho chips I used Both
  • 1/4 tsp cinnamom powder
  • 1 tsp Vanilla Essence

Instructions

  1. Preheat the oven at 180 degrees and prepare your bread loaf tin or baking dish by ling a parchment paper o dusting it.

    Keep all the ingredients handy before starting as shown below

  2.  Prepare the wet ingredients

    Mash 4 Bananas, then add eggs, oil, sugar, vanilla essence and whisk for 10 minutes

  3.  Prepare the dry ingredients

    Sieve the flour, with baking powder, soda, salt and cinnamon powder, repeat this step twice or thrice.

  4.  Now gently mix the dry and wet ingredients. keep mixing for around 2-3 min until its well combined.

  5. Lastly, Add the chopped nuts, Chocolate chips and transfer the cake batter into a bread loaf tin or any baking dish.

  6. Place in pre-heated oven and bake for around 35-40 mins. keep checking after 25 mins to avoid overcooking.

  7. Thats all delicious banana bread is ready to serve!

Recipe Notes

You can also use 1 cup while wheat flour and 1 cup all purpose flour as well.

Use the same batter for cup cakes as well.

Whole Wheat Dinner Rolls / Pav

Ingredients

  • 2 & 1|2 Cup Whole Wheat flour
  • 2 Tbsp Milk powder
  • 2 Tsp Instant yeast
  • 2 Tbsp Soften butter
  • 1 Cup Whole milk
  • 3 Tbsp Sugar
  • 1/4 Tsp Salt
  • 2 Egg

Instructions

  1. Mix all the dry ingredients and keep aside

  2. Slowly add eggs, melt butter and milk and start kneading the dough until firm

  3. Transfer the dough on work area and knead it very gently.

  4. Make sure the dough is not too sticky or very hard. Use extra flour or milk if needed to adjust the dough. 

  5. Cover the dough with moist cloth and allow it to rise for one hour

  6. One the dough has risen, Transfer on kitchen counter and start kneading gently for 5 minutes.

  7. Roll out the dough in to rectangle shape and gently roll forming a log shape.

  8. Divide the dough into 12 equal size balls and  roll ball into rectangle shape and while folding seal the edges after every fold(tuck sides and pinch seam along edge of dough.), this helps in forming round rims inside the bread. As shown in the image.

  9. Transfer into baking pan and cover with damp cloth and allow it proof for 30 mins

  10. Now bake for 30-35 minutes (varies with oven) on 180 degrees. Give egg wash on the bread.

White Milk Bread

White Bread with Milk

Every mom's biggest task is fixing the next day meal plan, I was feeling very lazy to make it to grossary store, that is when I thought for making bread at home for quick breakfast fix.

Seeing this bread one might feel its lot of efforts, but its actually not. The task is simple and gives you enough time gaps to continue with other tasks. The overall time taken for preparing this bread may be more but trust me, the efforts are very minimal.

The recipe is very simple and has nothing very complicated. Baking own bread home is for sure a very satisfying feeling. Do try it and let me know your about your results.

  10. Bake for 30-35 minutes on 180 degrees and in between brush with egg all over the bread.

Recipe Notes

For best results, leave the bread in oven overnight and use next day morning with freshly made Banana Jam. If you need recipe if quick bread jam, lemme know in comments, I'll post a recipe of it soon!

Whole Wheat banana Bread with Coconut

Banana Bread with Whole Wheat and coconut

Banana bread is loved by one and all, and at my home tea time snack is most vital as we all come back from work/school and sit together after long day out. To make this little time more special, I need to find a quick healthy snack.

There is always a constant struggle for me to find a perfect healthy and guilt free snack for this time of the day. And this recipe is just an answer for that. The recipe i'm writing down is almost kind a treat to banana bread lovers and with the hint of coconut, its definitely going to be everyone's favorite.

The most important step in baking this bread is the waiting time before putting the batter into the oven.  The dry and wet ingredients have to be separately mixed and once after mixing together let it rest for around 20 minutes.

So lets get started with the recipe.

Ingredients

  • 1 cup Whole Wheat Flour
  • 1 cup Shredded fresh coconut
  • 1/2 Brown Sugar
  • 4 tbsp Honey
  • 1 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 1/4 cup Chopped walnuts
  • 2 Generous pinch Cinnamom Podwer or Cardamom powder
  • 1 Egg
  • 50 grams Butter
  • 2 tbsp Oil
  • 1 pinch salt
  • 1/2 Cup Semolina
  • 2 Ripped bananas

Instructions

  1. Preheat the oven at 150 degrees and line a bread loaf pan with baking sheet, keep aside

  2. Sieve all the dry ingredients at least 5-6 times- wheat flour, semolina, baking powder, salt cinnamon powder.

    The more you sieve the more air gets in, its important to incorporate lots of air as we are using only wheat flour.

    Also, using a whisk keep mixing the dry ingredients for 5-6 miniutes.

  3.  Take another bowl, break in the egg along with brown sugar, mashed banana, honey and add the grated coconut, keep stirring all these ingredients for 10 munites and allow it rest for 5 minutes.

  4. Next step is to mix both the dry and wet ingredients and adjust the consitancy with 1 or 2 tsp of water if the batter seems to be too thick. It shouldn't be as thick as a dough or as runny as a cake batter.

    Leave it at room temperature for around 20 minutes and then bake it at 160 degrees for 50 minutes in middle rack. Test with tooth pick for readyness. Allow it cool completely before slicing and serving!

Recipe Notes

Whenever I try to make this bread with double these quantities, the banana bread remained soggy in the middle, that's why I halved the actual measurements and tried. The bread was perfectly baked. If you wish to double the quantities make sure your dividing the batter in two separate loafs or cake tins.

Ingredients

Bread - 2 1/2 cups all purpose flour, 1 egg, 1/2 tsp instant yeast, 1/6 spoon salt, 1 tbspn sugar, 1 tbspn milk powder, 1/4 tsp baking powder, 1 cup warm milk, 1 tbsp melted butter and 2 tbspn oil

Stuffing - 250 grams minced meat, ginger garlic paste, spices, capsicum, fresh leaves

  • 1 Cup Mozeralla cheese
  • 1/2 Tsp Nigella seeds
  • 1/2 Tsp Sesame seeds

Instructions

  1. Sift the flour and add the dry ingredients - salt, yeast, baking powder, sugar, milk powder. Mix and keep aside

  2. Mix the egg, oil, melted butter  and warm milk and start kneading the dough

  3. Adjust warm milk if needed add more or less to make the dough. The dough has to be as firm as pizza dough

  4. Knead the dough for ten minutes and cover with a damp cloth and set aside for raising for 45 mins. The dough will be double in size

  5. Stuffing - take around 4 tablespoon oil and add one medium roughly sliced onion,  1 tsp ginger garlic paste, coriander powder, zeera powder, red chilly, capsicum,  turmeric and cook for 15 minutes. 

  6. Make sure the stuffing is completely dry. Add coriander leaves and garam masala powder.

  7. Cool the stuffing 

  8. Divide the dough into two halves and roll out in round shape. 

  9. On one half, add the stuffing and cover fully with one cup of mozeralla cheese and use the other half of rolled dough to fully cover the stuffing and seal the egdes. As shown in the image.

  10. Now place the bread one preheated over on 180 degree for 25 minutes. 

  11. In between give the egg wash for second time. Sprinkle nigella and sesame seeds.

  12. The end result

The filling can be made as per your choice mince meant or chicken.

Aloo Paratha

  1. Aloo Parathas's

    Recipe!! My all time favorite, when I first read the recipe, it mentioned you might not be succesfull in getting a perfect one..!!! So, go ahead n try it, i'm sure ul get it best.!!! 

     Stuffing -

    1. 4-5 medium Potatoes(boiled and mashed)

    2. 2 medium onions (finely chopped)

    3. 1 Tomato (nicely diced - optional)

    4. salt (as per ur requirement)

    5. 1/4 spoon turmeric

    6. 1 tsp red chilly

    7. 1 spoon coriander powder

    8. Chopped fresh coriander leaves.

    9. One tbsp Oil

    10. 1tsp Ginger garlic paste</li>

    Dough - Normal chapathi dough.


First saute the onion in oil, then add ginger garlic. saute till raw smells disappears, now add remaining ingredients and saute nicely, at the end add boiled potatoes, nicely mix until the masala is incorporated in the potatoes. Make balls of this potato mixture as shown in step 1 in the image.

Roll chapathi into small round and place the potato ball as show in step 1 below. Then completely close the edges.

Roll the chapati, important note start rolling from the middle and roll very slowly, see to that the potato mixture is spread across the complete chapati. Then Use a non-stick tava and fry your paratha with butter. Server hot with chilled curd..Enjoy!!!

Chicken Bread

Recipe

Note – Making chicken bread all depends on how soft you make your dough!!

Ingredients!!

2 cup maida/All purpose flour

1 -1/2 tsp baking powder

1 tsp yeast

Warm milk mixed with water

2 tbsp milk powder (any)

1 tsp salt

1tsp sugar

3 tbsp butter melted

2 tbsp oil

Chicken Filling for bread(your choice)

2 Boiled eggs cut into halves

Method –

Preheat over on 180 degree.

First step –

Activate the yeast with warm water and 1 tsp of sugar(u can avoid this if u have instant yeast)

Second step –
Take maida, sieve with salt n baking powder.Use your fingers to nicely to mix maida with salt, milk powder n baking powder.
Now make a soft and sticky dough with warm milk, butter and oil.

Third step –

Clean your workspace on which your going to work, now using your palms make the dough soft by kneading for fifteen minutes atleast.

Once its soft, cover it with a damp cloth and keep aside for atleast one hour to rise.

Fourth step

Once your dough has risen, roll it in rectangle shape and cut the sides in stripes as shown in picture “step 1”.

Fifth step

Fill in the chicken filling and boiled eggs in the middle, and follow step 2. Arrange one strip over the over as shown in the image.

Once your chicken bread is ready, brush it with egg and sprinkle some sesame seeds over it and put it for baking on 200 degrees Centigrade for 20 mins. Keep checking after 20 mins and adjust the time and temperature accordingly.

Your fresh chicken bread is ready. Enjoy with tomato sauce or dip of your choice!!!
