Butter Chicken


A v rich and buttery gravy one of my favorites..!!

Step 1 – Cut boneless 1/2 kg chicken into fingershape long strips, marniate it with salt, ginger garlic paste and 2 pinch garam masala, fry them for 5-6 mins, (dnt fry completely as it would be cooked more in gravy).

Step 2 – Cut 4-5 onions roughly chopped, 4-5 tomatoes chopped tomatoes, now take a pan add 2 table spoon oil crackle 2 one inch cinamom sticks and 2 cardomoms, add cut onions, salt , saute them until brown, then add 1 tsp ginger garlic paste, cut tomotes, 1 and half tsp chilly powder, 1 tsp coriander powder, 8-10 cashew(optional), 1/2 tsp cumin powder, cook it for 15-20 minutes, once the tomatoes are done, cool this mixture and grind them to a fine paste. (i prefer grinding coz it would be silky gravy to restaurant like effect.)

Ste 3 – Take around 2 tablespoon of butter in pan[can add 3 also if your not on diet 🙂 ], heat it little, then add the grinded paste prepared in step 2,so that the aroma of butter is incorporated into the gravy nicely, to this add the fried chicken prepare in step 1, and let it cook for 10 minutes. At the end add 1 tablespoon of tomato ketchup(gives a tangy taste) and 1/2 cup fresh cream, fresh coriander leaves, 1 1/2 tsp dry kasturi methi (important) 1 tsp sugar, 1-2 drop of red color (optional).!! let it simmer for 5 more minutes and adjust the spices accordingly.

Goes best with naans, rotis. Serve Hot and enjoy..!!

Grilled Chicken pepperoita with corainder leaves sauce and roasted veggies!

Instructions

  1. A very yummy main course for chicken lovers!!

    Would be ready in just 15 mins!!

    Step 1 - Take two chicken breast, make slits on it with knife, marinate with salt, garlic, black pepper and olive oil. Grill it, till done. If you dont have a grill you can fry it with little olive oil until done.

    Step 2- Coriander sauce - fresh coriander leaves, salt, roasted peanuts, 1/2 green chilly (optional), 1 tsp fresh cream (optional) ground to nice running paste

    Step 3 - Roasted vegetables - Play with your choice of vegetable like capsicum, cabbage, tomatoes, and cut them into one inch cubes and slightly roast them with olive and salt.

    Now arrange the grill chicken on roasted vegetable bed and pour sauce over it. Enjoy!!

Tandoori Chicken with Chiinese Twist

Tandoori Chicken with Chinese twist!!

Ingredients –
Chicken marination – Marniate 1/2 kg chicken with salt, 1 tsp ginger garlic paste, 1 tsp red chilly powder, 1 tsp black pepper, 1 tsp tandoori masala (any brand everest, mtr etc). Set aside for 30 mins in refrigerator.
Now add 2 tablespoon maida, 1 tablespoon cornflour and one egg, mix well and set aside for 10 mins. Deep fry the chicken pieces with one bunch of curry leaves.(substitute if you dont have a grill) You also grill them if u wish to, as originally tandoori chicken recipe calls for grilling bt here i have fried!

For Chinese twist –

Cut onions, red, yellow and red capsicum in one inch cube. Take kadahi add 2 tablespoon oil add curry leaves, cur vegetables, then add one tablespoons garlic sauce, one tablespoon soya sauce, 1/2 tspn of vinegar, 1 tablespoon tomato sauce and little salt, one pinch of ajinomoto, 2-3 pinches of black pepper(optional) . Now add the fried chickeni pieces into this fired vegetable and cook for 2 mins and server hot! (remember you can always play with choices of your sauces in chinese)

Aloo Paratha

    Recipe!! My all time favorite, when I first read the recipe, it mentioned you might not be succesfull in getting a perfect one..!!! So, go ahead n try it, i'm sure ul get it best.!!! 

     Stuffing -

    1. 4-5 medium Potatoes(boiled and mashed)

    2. 2 medium onions (finely chopped)

    3. 1 Tomato (nicely diced - optional)

    4. salt (as per ur requirement)

    5. 1/4 spoon turmeric

    6. 1 tsp red chilly

    7. 1 spoon coriander powder

    8. Chopped fresh coriander leaves.

    9. One tbsp Oil

    10. 1tsp Ginger garlic paste</li>

    Dough - Normal chapathi dough.


First saute the onion in oil, then add ginger garlic. saute till raw smells disappears, now add remaining ingredients and saute nicely, at the end add boiled potatoes, nicely mix until the masala is incorporated in the potatoes. Make balls of this potato mixture as shown in step 1 in the image.

Roll chapathi into small round and place the potato ball as show in step 1 below. Then completely close the edges.

Roll the chapati, important note start rolling from the middle and roll very slowly, see to that the potato mixture is spread across the complete chapati. Then Use a non-stick tava and fry your paratha with butter. Server hot with chilled curd..Enjoy!!!

Chicken Bread

Recipe

Note – Making chicken bread all depends on how soft you make your dough!!

Ingredients!!

2 cup maida/All purpose flour

1 -1/2 tsp baking powder

1 tsp yeast

Warm milk mixed with water

2 tbsp milk powder (any)

1 tsp salt

1tsp sugar

3 tbsp butter melted

2 tbsp oil

Chicken Filling for bread(your choice)

2 Boiled eggs cut into halves

Method –

Preheat over on 180 degree.

First step –

Activate the yeast with warm water and 1 tsp of sugar(u can avoid this if u have instant yeast)

Second step –
Take maida, sieve with salt n baking powder.Use your fingers to nicely to mix maida with salt, milk powder n baking powder.
Now make a soft and sticky dough with warm milk, butter and oil.

Third step –

Clean your workspace on which your going to work, now using your palms make the dough soft by kneading for fifteen minutes atleast.

Once its soft, cover it with a damp cloth and keep aside for atleast one hour to rise.

Fourth step

Once your dough has risen, roll it in rectangle shape and cut the sides in stripes as shown in picture “step 1”.

Fifth step

Fill in the chicken filling and boiled eggs in the middle, and follow step 2. Arrange one strip over the over as shown in the image.

Once your chicken bread is ready, brush it with egg and sprinkle some sesame seeds over it and put it for baking on 200 degrees Centigrade for 20 mins. Keep checking after 20 mins and adjust the time and temperature accordingly.

Your fresh chicken bread is ready. Enjoy with tomato sauce or dip of your choice!!!

Garlic Rolls!

Ingredients For Dough!!

  • 2 cup maida/All-purpose flour

    1 tsp yeast

    1 tsp salt
    1tsp sugar3 tbsp butter melted
    2 tbsp oil
    • Filling for rolls

    I. 4 tbspn melted butter mixed with 1/2 cup of fresh chopped coriande/cilantro leaves
    II. 7-8 garlic pods, finely chopped.

    Mix I and II ingredients and your filling is ready!

      Preparation Method

    Once you make it like a roll, cut it in 2 inch thickness, as shown in step 3.

    Once your roll are ready, brush it with egg and sprinkle some sesame seeds over it and put it for baking on 200
    degrees Centigrade for 20 mins. Make sure that there is no space between the rolls in the baking dish, else the
    will fall on the side/open up. Keep checking after 20 mins and adjust the time and temperature accordingly till
    done.
    Your fresh garlic rolls are ready. Enjoy with tomato sauce or dip of your choice!!!

    Egg and bread pizza!

    Recipe!
    Step 1 : chopping veggies – 1 onion, 1 capsicum(red, yellow) 1 carrot you can add Baby corn,mushroom I did not have it, so I didn’t.

    Step 2 : break five eggs add all the veggies, pizza seasoning, oregano/ basil or any Italian herb mix.

    Then add one cup of grated cheddar and mozeralla cheese, salt, pepper

    Step 3: bake or cook on stovetop – you can bake it for 20 minutes at 180 degrees, but I cooked on stovetop.

    Take a round nonstick pan arrange four brown bread slices(pan was small, so square shape bread slices were bent at the edges, giving it a round shape with firm edges 😜 😊) and pour the egg mixture, cover with very tight lid, and the flame has to be vv low. For me I didn’t notice the bread base had turn till hard. So you gals avoid this mistake. But next time I will definitely make it in oven and I recommend the same.
    Step 4: cut into slices and serve with tomoto ketchup 😋 😋 definitely hit with kids

    Rajma Mutton

    Rajma Mutton!!

    Rajma with mutton, it’s a one pot one shot recipe. A very easy, delicious and nutritious curry that can be served with rice or roti.

    Prep time – 45 mins

    Step 1 : In pressure cooker add the following ingredients

    1 cup (Overnight soaked rajma – red kidney beans)
    1/2 mutton with bones
    2 large finely chopped onions
    2 large tomatoes
    1 tbsp ginger garlic paste
    2 bay leaves
    3-4 cardamom
    1 inch Cinnamom stick
    4 cloves
    1/2 shahzeera
    1 and 1/2 teaspoon coriander powder
    1/2 tspn zeera powder
    1 tspn red chilly (as per your intake)
    5-6 green chilly
    Turmeric
    Salt
    5-6 tbspn oil(I have used very less just one 1 tbspn)

    Cook on high heat all the above ingredients for sometime then add water and pressure cook for 4-5 whistles. And then leave it on sim flame for 15 minutes( make sure you add enough water in pressure).

    Step 2 : once the meat and beans are cooked, mash some of the beans and stir nicely to adjust the consultancy of the gravy. The gravy has to be semi thick as shown in the photo. At the end add fresh coriander, mint leaves, 2 generous pinch of garam masala and adjust the salt.

    That’s it rajma mutton is ready, server it with zeera rice or kaju biryaani!!!

    Mutton Rogan Josh

    Mutton Rogan Josh!!

    Mutton Rogan Josh. A famous kashmiri mutton curry!!

    It takes little more efforts but the result is all worth. (this is my customised version from many versions i got from internet, it was perfect)

    Step 1 – Roast the following ingredients and make it into paste

    1 tbsp khus khus (poppy seeds)
    1 tsp fennel seeds (sauf)
    1 tsp corainder seeds
    1 bay leaf
    1/2 tsp kalaunji (black onion seeds)

    Step 2

    Take 2 tbsp ghee in a pan and throw in 2 cinamom sticks and 3 cardamom, once they crackle add 1/2kg mutton and roast for 15 mins and keep aside.

    Step 3

    Take a pan add 2 tbsp oil, 1/4 tsp Asafotida(hing) 4-5 finely chopped onion (for half kg mutton it shud 1/2 onions), once onions are brown add 1 tsp ginger garlic paste, 1 tsp garam masala, 1 and half tsp red kashimiri chilly powder(dissolve the chilly powder into water n add), followed by 2-3 chopped tomatoes (optional), salt and the paste we prepared in step in 1. Cook till you get nice silky gravy for 20 minutes, at this time you time you can also grind this paste(optional). Once done, add the roasted mutton and cook / dum for 1 hour on medium flame, till the mutton is done and oil oozes out. Serve hot with rice or roti!
    Recipe For Paaya Nahaari/Trotters soup

    Spices needed – 7-8 Cloves
    5-6 cardamoms
    3-4 cinnamon sticks
    8-10 kavaab cheeni
    2-3 bay leaves
    1 teaspoon shahzeera
    2 tsp Nahari masala [I didn’t have potli ka masala with me so I used Mehran Nahaari masala] 1 teaspoon peppercorns
    Trotters 6 nos

    Step 1 – Deep fry 3-4 medium onions and set aside
    Step 2 – In Pressure cooker, add thoroughly cleaned trotters, and add all the above mentioned spices along with 1 cup of chopped mint, coriander leaves, one medium onion and 2 glass of water.
    Pressure cook for 5 whistles. (if you want you can separate the trotters and keep aside and then move to step 3)
    Step 3 – Once the trotters are soft, add 4 glass of water then add 1/2 garam masala, chopped coriander and mint leaves, 3-4 green chillies and let it simmer for 10 minutes.

    Step 4 – Preparing the wheat flour slurry.
    In pan take 3 Tablespoon of oil add 2 heaped teaspoon of ginger garlic paste, cook the gg paste until brown, then add 2 heaped tablespoon or 1/2 cup wheat flour, roast the wheat flour nicely, then add hot water and make smooth slurry with the help of whisk, make sure no lumps are formed.
    Add this slurry to soup and cook for 10 minutes. Lastly add the fried onions and little more mint leaves for garnish.

    Serve with hot parathas!!
